Seed bread stuffed with a mixture of aubergine, red pepper, olives, cashew nuts and dry grapes all marinated in orange juice and olive oil.

That’s one of our food options at the Cafe! Very tasty, succulent and healthy!

Ingredients:
2 aubergines (medium ones)
1/2 onion
1 red pepper
2 tbsp sugar
5 tbsp dry grapes
1 & 1/2 veg stock
100 ml orange juice
10 tbsp olive oil
200g/7oz cashew nuts
8 seed breads (don’t panic!)…
…I’ve used 8 Seed Breads but you can do with any kind of bread. You can also make 4 or less portions and leave some to eat over the week. This recipe can be easily kept in the refrigerator up to 2 weeks!

Method:
Aubergines: cut them in order to became thin and long.. Keep them in a pot with water until you finish with the other ingredients.
Onios and red pepper: small cubes (like 1cm).
Olives: cut them in half (those ones with no seeds) or take the seed out.
Now drain the aubergines. Use a microwave container and mix them with everything else, except for the cashew nuts and the bread. You gonna have: aubergines, onios, red pepper, dry grapes, orange juice, olive oil and veg stock.
-5 mim in the microwave, take it out and stir it, let outside breathing for 2 min… (be careful cause this can burn you!)
-more 5 mim in the microwave, take it out and stir it, let outside breathing for more 2 min…
-more 3 min in the microwave.
The cashew nuts should be roughly chopped and add just before serving.
The bread should be filled or covered warm to make it perfect.

You should try! This recipe just involve some chopping and microwaving, and as I said is healthy and truly delicious!
